Sweet Potato, Kielbasa, and Black Bean Skillet 

Tip: Sub Kielbasa for vegan option if looking for a meat free version


Ingredients:

  • 1 large sweet potato, peeled and diced

  • 12 oz kielbasa, sliced into rounds

  • 1 can (15 oz) black beans, drained and rinsed

  • 1/2 red onion, diced

  • 1 bell pepper, diced (optional)

  • 3 cloves garlic, minced

  • 1 chipotle pepper in adobo sauce, chopped (or to taste)

  • 1/2 tsp smoked paprika

  • 1/2 tsp cumin

  • 1/2 tsp chili powder

  • Salt & pepper to taste

  • 1 tbsp olive oil

  • 1/4 cup chicken or vegetable broth (optional, for added moisture)

  • 1 lime wedge (for squeezing at the end)

  • 1/2 cup chopped fresh tomato (for topping)

  • Fresh cilantro or parsley for garnish

Instructions:

  1. Cook the sweet potatoes – Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for about 5-7 minutes, stirring occasionally, until they start to soften. If needed, add a splash of broth to help steam them.

  2. Sauté the kielbasa – Push the sweet potatoes to the side of the skillet and add the sliced kielbasa. Cook for 3-4 minutes until browned.

  3. Add veggies and spices – Stir in the red onion, bell pepper (if using), and garlic. Cook for another 2-3 minutes until fragrant.

  4. Mix in chipotle and black beans – Add the chopped chipotle pepper, black beans, smoked paprika, cumin, chili powder, salt, and pepper. Stir well and cook for another 3-5 minutes until everything is heated through.

  5. Finish & serve – Squeeze a wedge of lime over the dish just before serving. Top with fresh chopped tomatoes and garnish with cilantro or parsley.

Serving Ideas:

  • Serve over rice or quinoa for a heartier meal.

  • Top with a fried egg for a breakfast twist.

  • Add avocado slices or sour cream for extra creaminess.
