Let's Talk About Fennel!

Some of you love fennel and some of you are saying "What the heck is fennel?", I've got you both! First let's talk about what it is and then let's dive into some yummy recipes!


Fennel is a flavorful and aromatic herb that acts like a veggie, with a mild, licorice-like taste. -Don't worry, not like the gross jelly bean! Think of the little seeds in sausage - that's fennel! It belongs to the carrot family and has feathery green leaves, yellow flowers, and a crisp, bulbous base that is often used in cooking.


Both the bulb and seeds are edible and commonly used in Mediterranean and Indian cuisines, adding a sweet and slightly spicy depth to dishes. Fennel is also known for its digestive benefits and is often brewed into teas or used as a natural remedy for bloating and indigestion.


Ok, so now we know what Fennel is, now what do you do with it?! All kinds of things!! As I mentioned the seeds are used in sausages, but also manyMediterranean and Indian dishes. You can eat the bulb, seeds, stalk, fronds, and even the flowers!


Try this yummy Fennel Apple Salad!


Fennel, Apple & Shallot Salad

Serves: 4


Ingredients:

  • 1 large fennel bulb, thinly sliced (reserve fronds for garnish)

  • 1 crisp apple (such as Honeycrisp or Granny Smith), thinly sliced

  • 1 small shallot, thinly sliced

  • 2 tbsp fresh lemon juice or apple cider vinegar

  • 2 tbsp extra virgin olive oil

  • 1 tsp honey or maple syrup (optional for balance)

  • ½ tsp Dijon mustard

  • Salt & black pepper, to taste

  • ¼ cup toasted walnuts or almonds (optional for crunch)

  • ¼ cup shaved Parmesan (optional for extra depth)


Instructions:

  1. In a large bowl, toss the thinly sliced fennel, apple, and shallots together.

  2. In a small jar or bowl, whisk together the lemon juice, olive oil, honey (if using), Dijon mustard, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to coat.

  4. Garnish with fennel fronds, toasted nuts, and shaved Parmesan if desired.

  5. Let the salad sit for about 5–10 minutes to allow the flavors to meld before serving.
