Kimchi Grilled Cheese Sandwiches


Kimchi is a tangy, spicy, and probiotic-rich fermented cabbage that adds a deliciously unique flavor to any dish. Packed with gut-friendly bacteria, vitamins, and antioxidants, it's a fantastic way to support digestion and overall health. If you're new to kimchi, this grilled cheese recipe is the perfect introduction—its savory, cheesy goodness balances the boldness of kimchi, creating a truly irresistible sandwich! Like, really! It is a fav in our household!


Ingredients (Makes 2 sandwiches):


  • 4 slices of sourdough or your favorite bread (Also yummy on pumpernickel bread)

  • 4 oz (about 1 cup) kimchi, drained and roughly chopped

  • 1 Tbsp sweet pickled jalapeños (adjust amount to taste) - We like the ones from Trader Joe's

  • 1/2 cup frozen spinach

  • 1 small tomato, diced

  • 1/4 cup red onion, thinly sliced

  • 4 slices of cheese (such as sharp cheddar, mozzarella, pepperjack or a combination)

  • 2 tbsp butter, softened (for spreading on bread)

  • 1 tbsp mayonnaise (optional for a golden crust)


Directions:


  1. Prep the Bread: Spread one side of each slice of bread with butter. If desired, spread a thin layer of mayonnaise over the butter for extra crispiness.

  2. Cook the ingredients: With a Tbsp of olive oil, sauté the onions, tomatoes, spinach, jalapeños, and kimchi until heated through and the onions and tomatoes are soft.

  3. Layer the Sandwich:

    • On the unbuttered side of one slice of bread, layer the ingredients as follows:

      1. A slice of cheese.

      2. A generous layer the kimchi mixture

      3. Another slice of cheese.

    • Top with another slice of bread, buttered side out. Repeat for the second sandwich.

  4. Cook the Sandwich:

    • Heat a large nonstick skillet or griddle over medium-low heat.

    • Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese starts to melt, about 3-4 minutes per side. Press gently with a spatula for even cooking.

  5. Serve:Slice the sandwiches diagonally and serve warm. Pair with a simple salad or a bowl of soup for a complete meal.

I will have to try that sandwich. I’m a big fan Sarah, Kraut, and candied jalapeños slice.
