What’s for Dinner? A Taste of Great Britain: Shepherds Pie, Moussaka, Curry, & Steak & Ale Pie

Look How Big I Am!It has been almost a year since we were in Great Britain and I am longing to go back.  I loved the people, the architecture, the history, I even enjoyed the rain (notice I didn’t say “love”) and we really loved the food.  We had been told that the food would be bland, but I completely disagree, we thought the food was wonderful and full of flavor and we felt connected at meal times! While we were there we had Italian food, pub food, sandwiches, pasties, you name it and enjoyed trying new flavors.  My husband even liked blood sausages, but I wasn’t so sure.  At least it wasn’t Marmite (yeecchhh)  I was told that you either love Marmite or hate it.  Yeah, I don’t love it.  It tastes like eating bouillon cubes (stock cubes) straight. yummm, but we tried it. If you love it, that’s ok.

 There are a few things that you can’t get here in the USA or they are hard to find; Pimms which is an alcoholic drink they love over there, lemonade which is fizzy and not as sweet as ours, a good pasty shop just to list a few. So for those things, I guess I’ll have to go back.  oh, and Primark and Marks & Spencer, and Pret a Manger and Yo Sushi.  and, and, and,  ok, ok, I have to go back! But you can make some of the wonderful things we tried.  This week’s meals are an attempt at recapturing some of the taste of Great Britain.  Enjoy!

The Meals:

 Meatless Monday: Veg Moussaka – Jamie Oliver

Time: 2 hours

Ease: moderately difficult

Review:  This recipe is great, but a lot of work and a solid 2 hours of your time.  That said, it was very good, even with eggplant, which I am not a fan of.  I have no hesitancy giving this recipe a positive review, I think you’ll enjoy it and the meat eaters may not even notice it’s missing.  Just keep in mind it takes a good 2 hours and probably 2 ½ until it is on the table, but worth the time.

Shepherds Pie  – BBC Good Food

Time:  1 hour 15 Minutes

Ease: Simple

Review:  This is really a very simple dish and it is comforting and filling.  My family likes things a little spiced up so I added rosemary, thyme, and a pinch of cayenne pepper.  The result? Plates licked clean!  This is a great Sunday night, meat and potatoes dinner.

Tip: try adding cheese on top or mixed into the potatoes.

Steak and Ale Pie – BBC Channel 4

Time: 1 Hour 45 Minutes

Ease: Moderate

Review: This recipe was pretty straight forward with easy instructions, I found that I had too much liquid and had to reduce it until it looked to be the right consistency, which added another 10 minutes.  Other than the issue with the liquid this was a great dish and another comfort food kind of flavor. I liked having puff pastry as the crust rather than pie crust, it added dimension to it. My husband thought this was a wonderful meal and informed me that we could most definitely have it again!  OK-I’m all about happy tummys and hubbys!

Curried Chicken

  •  6 Chicken thighs
  • 1 onion chopped
  • 1 Tbsp sherry vinegar
  • 1 Tbsp sugar
  • 2 cloves garlic minced
  • 1 tsp Garam Masala
  • ½ tsp Cumin
  • ¼ tsp Corriander
  • 2 Tbsp curry (may adjust per taste)
  • 1 can plum tomatoes chopped
  • Rice

Sauté onion until it starts to caramelize, add garlic and cook about 30 seconds, add spices and sauté until fragrant (about 30 seconds to a minute), add sugar and vinegar and stir through.  Next add tomatoes and heat through then pour over chicken in a deep baking dish and bake until chicken is done, an internal temperature of 165-175. Serve with rice.

Note: for richer flavor try searing chicken in a hot pan before baking, but this dish works well without it.

Time: 35 Minutes

Ease: Simple

Review:  I was in the mood for some of the great flavors that come with curry, but couldn’t decide what to make and improvised taking bits and pieces from different recipes and then throwing in spices I thought sounded nice.  That means this is not a proper curry, but I think that it turned out nicely and my family loved it.  The leftover chicken made a great chicken salad the next day.  I hope you enjoy it.

Chicken, Spinach, Alfredo Pizza (ok, this one isn’t British)

There were a few things that I just couldn’t enjoy in England; pizza and coffee!  Stick to pasties and tea and you’ll be fine.  Friday night I just wanted a quick meal, so I left my theme and pizza it was.

Time: 30

Ease: Simple           

Review:  I know I’m always telling you to “make it from scratch”, but let’s be real, we all just need something quick and easy sometimes so here it is, one of my Friday night, hanging in front of the TV easy meals! Go ahead, you have my permission.

  • 1 pizza dough. I use the dough made from the grocery stores that serve pizza, they will often store it in the freezer case or the deli case, or you can make your favorite recipe. (if your are from North Carolina Harris Teeter and Lowes Foods carry it)
  • Frozen, grilled chicken pieces, leftover chicken or chopped cooked chicken
  • 1 jar prepared Alfredo sauce
  • ¼ Red onion cut in rings or enough to evenly lay across the pizza
  • ¼ cup frozen spinach, thawed and squeeze the liquid out
  • Mozzarella cheese
  • Olive oil and garlic powder

Preheat oven to 400. Roll out the dough to make one pizza, top with several large scoops of sauce up to 1 inch from the edge, then place a layer of chicken nearly covering the sauce.  Grab spinach in pinches and place throughout the pizza and top with red onion rings.  Cover with cheese.  Brush olive oil around the edges of the crust and sprinkle with garlic powder.  Bake until golden brown on top and crust is browned on the bottom, about 20 minutes.

When planning out this week’s meals try looking up trivia about England and talk about it over dinner or ask each person to find one interesting thing about England that they would like to share, this gives everyone the chance to participate.

sticky lemon cakeLife is short, eat dessert first, or so they say and I am tempted to agree now that I’ve found this yummy recipe.  I’m starting this week’s post with this  “Sticky Lemon Cake”,  It is heavenly, sticky, rich…..mmmm.  I found the recipe in a mystery book I read called “Aunt Dimity and the Deep Blue Sea” by Nancy Atherton.  I love the books, but find that when you say , “yeah, I got the recipe from my murder mystery I’m readying” everyone acts just a little suspicious!  The genre is called cozy mystery, in addition to the dessert I highly recommend the Aunt Dimity series.

Potato Soup: Meatless Monday

Ease: Simple

Review: Potato soup is one of the ultimate comfort foods.  I love it when I’m sick, when I’m cold or just because.  I like to play around with recipes, but this week I just made a basic potato soup.  Feel free to adapt.  Try curry, chimichurri, pesto.  You make it something new every time.

5-6 medium sized potatoes cut into uneven cubes about an inch in size

Chicken or vegetable broth (enough to cover cut potatoes)

½ cup diced onion or 1-2 leeks, diced

Salt and pepper to taste

½ cup milk

1 tsp olive oil and 1 tsp butter

Optional: celery, carrots, pesto, bacon, sour cream, cheese, poultry seasoning.

Melt the butter together with olive oil and add onions or leeks and any other vegetables and cook until translucent. Add any special spices and cook about 30 seconds or until fragrant.  Add peeled and cut potatoes to pot and cover with broth and bring to a boil.  Cook until potatoes are tender then reduce heat and add milk and salt and pepper.  If you don’t puree the soup t add sour cream and cheese, if using, at this point. Cook until cheese is melted and serve.

In my house we have people who like it chunky and people like it smooth so we compromise.  I pull out half of the soup before adding cheese and blend until smooth (caution, do not overfill blender to avoid burns) then return it to the chunky soup left in the pot.  Everyone is happy or at least half happy!

 Braised Chicken Thighs and Potatoes (pressure cooker)

Ease: Simple

Review: This is a very simple dish and can be adapted for the stove top.  The flavors are that of comfort food and the Tarragon adds a nice flavor.  If you have never tried tarragon, this is a great dish to have your first time with.  Remember to experiment with spices, you may be surprised at the flavors that you find.

8 (5-7 oz) bone in chicken thighs, trimmed

1 Tbs vegetable oil

1 onion , chopped finely

3 garlic cloves

2 Tbs flour

½ cup dry white wine

¾ cup low sodium chicken broth

2 pounds small red potatoes, halved

1 Tbsp minced fresh tarragon

Brown the chicken, skin on in the pressure cooker until golden brown (or in frying pan) then remove the skin.  Reserve 1 Tbsp of fat in pressure cooker (or pan) and sauté the onion until translucent then add garlic and cook about 30 seconds.  Stir in flour until combined and stir in wine getting rid of any lumps, reduce slightly.  Add broth then add the chicken.  Cook on high pressure for 20 minutes with quick release.  You may also cook on medium high heat on the stove until chicken is cooked through.

Beef Tamale Bake – Pampered Chef

Ease: Simple

Review: I love pampered chef recipes and products. I’m not a rep, but just love the stuff!  One of the reasons I like the recipes is that they often give the illusion that I have slaved away in the kitchen to make some elegant dish, when if fact, I didn’t.  I love cooking, but not for the sake of cooking.  I love cooking because of how it makes people feel, so no need to be a gourmet chef, but it is ok if everyone thinks I am! Pampered Chef recipes are quick, easy and often beautiful dishes.  While this dish isn’t as much on the elegant side it is still quick and easy. It has great flavor, but watch the liquid to cornbread ratio, it can feel a little dry if not careful.

Apple Stuffed Pork Loin with Cider Sauce

Time: 1 ½ hours

Ease: Simple

Review:  Easy and wonderful.  We made this for family who had come into town and everyone was pleased.  After the 11 ½ hour trip they said it was worth the drive!  Well, maybe no true, but I think you will find this to be a great dish to make for company or your family.  My Pork loins were not very big so when I sliced it, it didn’t make nice spirals and was a little messy.  No one cared or knew that I didn’t mean for it to look the way I served it.  That is usually the case, so relax and act like you meant to do it!

Baked Potato and Salad Bar

Time: 1 Hour (depending on method of cooking potatoes)

Ease: Simple

Review:  We do this every so often, and you have seen it before, but I post it as a reminder that dinner can be simple and still be fun.  Set up a buffet of salad toppings and potato toppings and let everyone make their own.  It is fun to see what some people come up with.  You will have the butter and salt and pepper people and then the Dagwood Sandwich type potato.  Try things like raisins, nuts, cheese sauce, salsa, horseradish, broccoli, tomatoes, carrots, edamame, chickpeas, bacon, shredded cheese etc.  Check out some ideas from The Yummy Life and have fun.

Review:  yum, yum yum!  I made this for our guest this weekend and it was a big hit.  It is really pretty easy and gives you something to move beyond the plain pancake.

Bringing Back Dinner Tip: Tea Sandwiches and Hors d’oeuvres for Dinner

Everyone likes little things (well not always the guys, but they can adjust).  Try making dinner one night using salad plates and have a variety of tea sandwiches available, things like chicken salad, egg salad, ham, cucumber and add in some bite sized desserts and/or scones with jam and clotted cream. Visit BBC Good Food for some ideas.

If you aren’t  into the tea sandwich thing try heavy hors d’eovres such as mini roast beef sandwiches, little quiches, meatballs, mini beef wellingtons.  Visit Martha Stewart online for some ideas. Dinner doesn’t have to be a meat, potato, and vegetable.   Play with your food!

What’s for Dinner? Sloppy Joes, Quinoa Enchilada Bake, & Chicken Parmesan Soup

valentines dayI hope you had a great Valentine’s Day!  Here in Greensboro we had a crazy snow of , wait for it…around 7 or 8 inches!  I know, all you mid westerners are laughing at us, but the whole city screeched to a stop and it was beautiful.  You would think this would mean I cooked more, but no.  I planned my meals as usual (5 of them) and then it snowed!  By Valentine’s Day we were all ready to get out a little and as a result I made three of the meals I had planned and then we ate out and had frozen pizza.  Even though things didn’t go as I planned it was still a successful week.  Remember the point isn’t just getting everyone fed, it is to enjoy each other’ company, to talk, to listen and just be!

Review: Try this, try this, try this.  Maybe you are not so sure about this quinoa stuff, maybe it seems to exotic-not to worry.  It easy to cook with and wonderful.  We loved this dish, it was full of flavor, easy to make, and felt fresh and clean!  I think it will become one of your family favorites.  It would be a great dish to make for a covered dish or for company.

Slow Cooker Chicken Parmesan Soup – Nature Box

Time:  4 hours in crockpot or 45 minutes on the stovetop

Ease: Simple

Review: Sometimes I look at a recipe and think “really? There isn’t much to this, is it going to work?” and sometimes I’m right, but I’m glad to say that this recipe proved me wrong.  It is very basic and really very good.  The next day everyone wanted the leftovers to take to work, I thought we’d have a brawl in the kitchen.  Worse, there weren’t any leftovers! Everyone just thought there were. (I am not a member of Nature Box, but found the recipe online)

This isn’t spaghetti like or even tomato soup like, it has it’s own flavors.  It is filling and simple.  You could make this on the stove top if you don’t have a slow cooker.

Review: I am a firm believer in making things from scratch!  It is a great way to cut down on the sodium and preservatives that are in pre-packeged meals and once you start you will realize that it really doesn’t take much more, if any more time and you get the added bonus of knowing that you have made a meal that is better for your family or friends and maybe they will even think you are amazing in the kitchen.  Plus, you can’t beat the taste.

I have review this recipe by Ellie Krieger before, it is a staple in our home.  That said it is worth bringing back around.  Don’t be afraid, it is almost as easy as opening a can, but the flavor is so much better.  Note: our family prefers it without the beans.  You can try it both ways and see what everyone thinks.

Table 16, Downtown Greensboro NC

Valentine’s Day my wonderful man took me to Table 16 in Greensboro, NC.  It is wonderful.  I am most impressed by the complexity of the dishes,  yet nothing seems to get lost or is over worked.  You can taste each spice and they complement each other well.  We’ve been twice and are still impressed.  The service was great and they have a nice wine list.  If in Greensboro I suggest you give it a try.  Table 16 is located downtown, so allow extra time to walk around and take in the sites!

What my House looks like! Titled: When Elves vomit (ok Vomit isn’t a great word for a food blog, but really…look at that mess!  But we are having fun!Photo 6It is easy to become frantic at the holidays.  I know I go crazy trying to organize everything, keep the house clean, and have food on hand for the unexpected holiday guest. Then I have to stop myself and remember it is all about the people.  Relax, Just enjoy each other.  Stop in the madness and let the holiday season begin. While you’re at it take some advice from Robert Frost:

The Meals:

Bacon, Pineapple & Spinach Pizza

Time: 30 -45 minutes

Ease: Simple

Review: We had birthday number three this week and the request was simply “As long as it has lots of bacon and cheese…”.  So, my husband and I bounced around some ideas, I asked for help from friends and FoodieChats, via twitter, and received some great ideas.  There is one foodiechat recommendation that my husband is begging for me to make, so expect to see Poblano stuffed peppers with cheese and wrapped in bacon from @jeffriessunni at some point.  He is so excited.

I said, offhandedly, what about bacon pizza with something like pineapple and didn’t think about it again until my husband calls me from work and says “oh, I told him you were going to make pizza with bacon and pineapple and he thought it was awesome”. Ok, uhhh well. I didn’t actually know what I was going to do, but the results were great and the birthday boy was happy.

Pizza crust (I used pre-made crust from my grocery in the deli section)

Alfredo sauce

Mozzarella and Gouda cheeses

bacon, cooked and crumbled

caramelized onions (if you caramelize the onions on this day it will bump you time up to allow for good caramelization of the onions)

spinach (fresh or frozen)

pineapple bits

I made three pizzas, you will adjust the amounts based on what looks good and works for your table.  I find it is easier to just put things on the pizza until it looks right and I rarely measure.  Top your crust with a few spoonfuls of Alfredo sauce; just enough to cover, not make it saucy.  Then layer the rest of the pizza with chopped caramelized onions, crumble the bacon and cover pizza, add fresh or frozen spinach on top-amounts to taste, then add bits of pineapple across the spinach.  Top with a blend of mozzarella and Gouda and bake per the instructions of your crust.  Approximately 375 degrees for 30 minutes.  Enjoy!

Tip: Many grocery stores sell the dough they use to make in-house pizzas and it is a quick, but tasty option.

Grape Leaf Wrapped Salmon : Green Valley Grill, Greensboro NC

Time: 30 minutes

Ease: Simple to moderate

Review:  First I’d like to say that the Green Valley Grill is one of my favorite restaurants.  It has wonderful food and you feel like you have escaped just for a while.  If you are ever in Greensboro, go!

I made this without the grape leaves this time, which does take away a bit from the dish, but still yummy.  It is easy and quick, but elegant.  I served it with creamy polenta and steamed green beans.

Sweet Potato, Black Bean, Corn Hashbeans and corn

Vegetarian, quick, Healthy

Time: 35 minutes

Ease: Simple

Review: There are a few meals I pull out when I want something quick and tasty and know everyone will like it and this is one of them.  It is hearty and healthy!  This week I was out of black beans, but didn’t know it until I started cooking-someone didn’t follow her grocery list, so I used pinto beans instead and served it with rice.  It was still tasty, but if you have it, I recommend using the black beans.

This time of year it is especially fun to play with your food!  If I could recommend a useful, but totally fun kitchen tool it would be a torch! And yes, I was tempted to say “Mwahh haa haa”.  A torch can be used for so many things, like browning the top of a casserole, or crystalizing sugar on a brulee, or flambes!  It is just a great tool.  This week we used our torch to brulee the sugar on top of grapefruit.  So yummy!

I know I only put three meals out for review this week, but this week we were invited to holiday gatherings at other peoples homes where we enjoyed great food and great company.  It is what it is all about: Relax, just enjoy each other and let the the holiday season begin!

I Love it When you get Fresh!

Dinner doesn’t have to be a chore and you don’t have to pull out the boxed mixes and packets to pull it off in time.  I promise, after a while you will embrace fresh, fresh, fresh!  It really doesn’t take much more time, if any, to use fresh ingredients.  The real issue is in our heads-it’s mental.  It seems like it is too hard, too time consuming, too involved etc., but the truth is that with a little practice you will be making fresh meals in minutes for your family and friends and they will love you for it.   Don’t feel like it has to be all or nothing here either; baby steps and start where you are.

Keep it fresh and alive at the table too.  Talk to each other, engage with your family and guests and get to really know each other.  Build trust at the table and remember to make it a safe place.  Here are some ice breakers: Get to Know you Cards, Dinner Conversation Starters, Highs and Lows: ask each other what the best part of the day was and what the worse part was and then talk about it.  Some of you are probably rolling your eyes right now, I admit a part of me does, but try it.  Be creative.  Dinner is not about getting food in their bellies, it is about savoring the moments both with your food and your relationships.  Enjoy!

TIP: Try setting up a Mise en Place to help you with time.  Don’t worry about dirtying more dishes; it cleans up quickly.

Time: 15 Minutes

Ease: Simple

Review: This is a quick and easy meal.  I pull this out when I’m rushed for time and I’m still able to give my family a fresh meal.  It is a family favorite.

Tip: Use low sodium canned beans and rinse well and use pepper jack cheese for flavor.

Time: 35-1 Hour; This dish could be a quickie if you use prepared spaghetti sauce instead of making the sauce.  There are many spaghetti sauces on the market that still keep this as a “fresh” dish.  Try organic, low sodium and look for the shortest ingredient list.

Ease: Simple

Review:  I found this recipe to be a nice and easy meal, but did not find the sauce to be especially flavorful and added hot pepper flakes, red wine, and a few more Italian spices to make it a little more full in flavor.  Next time I will probably use prepared spaghetti sauce, which will also cut the time in half.  Play around with this one and see what you get.

Time: 50 Minutes

Ease: Simple

Review: A nice hearty soup! Adjust the puree to your personal tastes, we like it in the middle.  This recipe calls from ground grains of paradise.  They can be found in places like Savory Spice or specialty markets.  It is a peppery spice with sort of woodsy flavor.  Very nice.  If you can’t find it just use pepper.

Time: 30 minutes to 2 hours; The time difference depends upon whether you use leftover meatloaf or make it for this purpose.

Review: Wow and yum!! If you don’t like meatloaf this may win you over.  It didn’t win over one of my eaters who didn’t care for the texture, but as for everyone else, people who still had room ate two!  You can try the meatloaf recipe (which is geat) or make your favorite recipe. 

I cut the bacon amounts in half and crumbled the bacon, just to try to make some attempt at cutting the fat. It still gave it a great flavor.  Don’t be scared by the tomato relish, it is simple to make and can be made while the meatloaf is cooking or even a few days ahead of time, but it truly makes the sandwich. This is a great recipe and now a family favorite. Try it, you can do it! Once you make the tomato relish you’ll be excited to try more.

Meal Five:   We had a pretty busy week this week and didn’t get to five meals, but I suggest that for a fifth meal make meatloaf earlier in the week, try making two at one time and serving one as a meal in itself and the other one for your sandwiches.  A great and easy side dish is roasted vegetables! I like to use chunks of squash, zucchini, onion, mushrooms, and bell peppers.  Toss in olive oil and salt and pepper and bake at 425 degrees for about a half an hour or until just tender, but not too soft.
