What’s for Dinner? Trader Joe’s Spinach Pie and Carne Asada Salad

This week I decided to make my meals from the recipes found on the Trader Joe’s website.  It was easy and yummy you just get the recipe and walk down the aisles and pick up the stuff.  I’m sold!  I hope you enjoy these meals and don’t forget!  Try to have at least one meal with everyone gathered together.  Try eating outside or on a blanket in the living room.  Just do something together with friends or family and enjoy!

Meatless Monday: Spinach Pie

Time: 1 Hour plus prep time

Ease: Simple

Review: This dish was great.  I made it when our son and his wife came over and he turned to his wife and said “hey, babe, make this”  I’d call that success.  It makes a great company dish with little work too.  My daughter-in-law thinks she may try it with squash, yummm.

 

Carne Asada Salad

Time: 20-30 Minutes

Ease: well, it kind of isn’t fair to say.  The meat comes in it’s sauce, so easy!

Review: This dish can’t get any easier and is so good.  It costs a little more because the meat comes in a package marinated in the sauce.  Cut it open and grill then put on the salad.  We all really enjoyed this and the Cilantro Dressing makes the dish.

What’s for Dinner? Pampered Chef Lemon Pasta Chicken Toss & Black Bean Pumpkin Chili by Kitchen Treaty

Summertime is full of vacations, staycations, running around and general busyness and can feel like we lose touch with each other, but with all of the parties, BBQs, picnics, pool parties etc.  It provides us with so many different ways to connect. So while summer is different from the rest of the year I encourage you to take advantage of the chance to connect, reconnect and just hang out with one another and build relationships as well as memories, so while this is a busy time remember you are still “Bringing Back Dinner”; food is the tool that gathers us.  Have fun and laugh a lot!

Pampered Chef – Lemon Pasta Chicken Toss

Time: 30 Minutes

Ease: Simple

Review:  I really do like Pampered Chef recipes, they are easy and always look like you worked much harder than y ou did.  This recipe is no different.  It was a quick and easy but still tasty meal.  We made an exchange though; spinach for broccoli.  You could use either vegetable or add something new.  This dish would be easy to play around with.

 

MEATLESS MONDAY – Kitchen Treaty – Slow Cooker Black Bean and Pumpkin Chili

Time: 6-8 hours on low

Ease: Simple

Review:  This dish sounds weird, I’ll just say it, but it is really very good!  My family loved it and one of them even tweeted about it  “Let’s just make a deal to put pumpkin in everything. It makes food ten times better.”  You can’t get a much better review!  We were divided on one aspect of this dish – heat.  That is why they make Sriracha sauce.  Just serve hot sauce on the side for those who want a little heat.  Otherwise a perfect meal.

We often think of the slow cooker as a winter cooking device, but it is a great for the summer.  It doesn’t heat up the kitchen and frees you up to run around town all day and not worry about dinner.  Pull out your crockpot and have a great day at the pool!  Dinner will be waiting for you.

What’s for Dinner? Pampered Chef’s BLT Ranch Salad Pizza & Vegetarian Lasagna

I have had several people talk to me about ways that their family connect and I want to take the time to say that my suggestions are just that, suggestions.  Please do not feel judged by me or unable to reach the bar etc.  The important thing is that you bring dinner back or breakfast into your lives and by this I mean take time around your meals to set aside the business of life and re-connect, get to know each other and share life.  However you do this I am rooting for you!  Relationships are an important part of life and making safe places is invaluable.  I’d love to hear from some of you about how you create such a place in your home.  Share through the comments section, on facebook or twitter and use #bringingbackdinner

This week we had several dishes with leftovers that were less exciting, but I think you will enjoy the two meals below.

Meatless Monday:

Asparagus-Mushroom Mini Lasagnas – Eating well Magazine

I’ve made this dish before, but had a friend who was interested in it, so here you go!

Time:  1 Hour 25 Minutes

Ease: Moderate to Simple

Review: this is really a great dish.  It is a nice dish for your family and would make a great dish for company.  You could try using different ingredients and use the same method to have a little fun with this!

BLT Ranch Salad Pizza – Pampered Chef

Ease: Simple

Review:  Pampered Chef recipes are simple, tasty and always look like you worked harder than you did.  They are not the healthiest, but good.  My family like this, over all.  My husband loved it and the kids thought it needed a little less cream cheese.  I have to agree.  I think the amount of cream cheese depends on what you like, so just adjust for your family.  When I make this again I will probably put half the amount of cream cheese on half of the pizza and the normal amount on the rest.  Keep everybody happy!

Leftovers Redone

This week we also turned leftover steak into fajitas.  I know, it sounds like a crime.  Otherwise there was not enough to share.  I also freeze any leftover spaghetti sauce and pulled some out for dinner this week.  Try making your leftovers into something else, but shhhhh don’t tell them, they will never know it.

What’s for Dinner? Black Bean and Corn Mexican salad & Buffalo Chicken Cupcakes

Meatless Monday – Mexican Salad with Black Beans and Corn née Grilled Mexican Steak Salad.

cook this mexican saladThis recipe is originally written to include grilled steak, which would be great, however we are trying to be diligent with our Meatless Monday quest and omitted the meat and added grilled corn.  The result was great and we would do this salad again!

Time: 20 minutes

Ease: Simple

Review:  The recipe is a nice one with great flavor and I feel it works well with or without the meat.  Follow the directions for this recipe omitting the directions for the meat.   Instead of steak try grilling corn or pan roasting the corn until it brown slightly and the cool. The dressing is wonderful and I can think of a lot of uses for it outside of this salad. Over all, this is a nice salad and a great new dressing recipe that I think you will enjoy.

Buffalo Chicken Cupcakes

Wait, wait  read on!!!  It isn’t what you think, they are just made in muffin tins!  Shew, you thought you’d have buttercream with hot wing sauce didn’t you.  Well, you could try it, but this isn’t it. buffalo chicken cupcakes Time: 40 Minutes

Ease: Average

Review:  Win!  This would be great football game food!  It was a great meal and could be served with celery and carrots or macaroni and cheese.  The way it is prepared tones down the heat for those afraid of wing sauce, in case you were worried and we really loved this. It was good cold the next day.  I know, I know but really any chicken is good cold for breakfast, that is if you don’t have cold pizza.  OK.  so much for healthy.  We did eat well the rest of the week.  It was our indulgence.

Meatless Monday: Bruschetta and Salad

bruschettaThis is my favorite time of year as far as food goes!  There are so many wonderful things to be eaten fresh from the garden!  One of my favorites is tomatoes.  There is just nothing like a real, fresh, from the garden tomato.  It is a sad day the day I have to buy the first tomato from the grocery.  It is round and red, but that is about it.  This week we decided to take advantage of some fresh tomatoes and made bruschetta and topped it with Manchego cheese.  Served with fresh lettuce from my friends garden.  Wonderful!

Time: 30 minutes

Ease: simple

Review: This recipe from the Pioneer Woman is very simple and flavorful.  It is a great recipe if you are new to making your own bruschetta.  Very simply, brushcetta is a combination of tomatoes, garlic bread, olive oil, salt and pepper.  This recipe has a lovely addition of balsamic vinegar.  Try experimenting with infused balsamic vinegars, such as pineapple balsamic vinegar.  I think you will find this can be a great “go to” recipe.

The Manchego was our addition, you could try experimenting with different cheeses or eat it just for the joy of the tomato!

 

Sauteed Flounder with Orange Shallot Sauce

Flounder is a nice fish with a distinct flavor, but not overly “fishy” flavor making it a nice fish to cook with and don’t think that flounder only comes fried!  Try baking it, stuffing it, broiling etc.  It is a good addition to your menus.

Time: 30 Minutes

Ease: Simple

Note:  though simple, at the bottom of the recipe it says they “highly recommend a non-stick pan”  They mean it!

Review: Eating Well Magazine is one of my favorite magazines and has been for 20 years!  It went out of publication for a brief period of time and I mourned the loss deeply and horded my old magazines, but they came back and are going strong!  And now you can get recipes online!  This recipe meets my expectations of something from EW.  It was easy to prepare and wonderful flavors. DO USE THE NON-STICK PAN, I didn’t and had some issues, but it still tasted nice and my husband made lovely yummy noises A+!

Meatless Monday

Time: 20 Minutes

Ease: Simple

Review:  Sometimes it is nice to throw a few things together and see what happens.  OK, for some of us.  I have some friends who would disagree, so if that is the case then just follow the directions below.  Otherwise, feel free to improvise with this.

Ingredients; I did not add amounts so that you can adjust to the size you need and to taste.

Pasta

Fresh Mozzarella

Sun-dried tomatoes, diced

1 small jar Artichoke hearts, chopped

Pesto

red pepper flakes

cherry tomatoes

optional, brocollini, squash, zucchini, caramalized onions, add to taste or make available like a buffet.

Cook your pasta and then toss in the above ingredients until it is the texture and taste you like.  I used about 1/2 cup pesto, 1 small jar artichoke hearts, 1/4 tsp pepper flakes, a handful of tomatoes, 1/2 cup of diced fresh mozzarella and mixed it all together and then served with slivers of asiago.  It was a nice, yet simple dish.

My Aunt Jane has to be the best cook on the planet!  She made this for us and my family has never forgotten.  This past year I tried another recipe and received sad looks as they said “It’s good, ya know.  It’s just not Aunt Jane’s” so, here you go!  My daughter doesn’t even like shrimp, but loves to dip her bread in this sauce. (Aunt Jane got it from Southern Living, but it is just something in the way she cooks anything that is the best)

Time: 40 Minutes

Ease: Simple.  They don’t say to peel the shrimp, but we do so that it is easier to eat and less messy.

Review: AAAmmaazing!  This is a finger lickin’, elbow drippin, mmm mmm meal.

What’s for Dinner? Fajitas and for Meatless Monday; Campalini Pomodoro

I’m sorry for the missed post this week.  I am afraid with spring and summer here cooking and therefore blogging have been less scheduled and planned in our house.  Everyone is in and out and traveling so much, but below are two dishes that hope will help give you some ideas.

Olive Garden’s Campellini Pomodoro – Olive Garden

Meatless Monday:

Time: 10 Minutes

Difficulty: Simple

Review:  This is one of my favorite quick meals.  I like it for its simpleness and full flavor.  This dish is especially good in the summer when you can use fresh tomatoes.  Try using different types of pastas, each one makes the dish taste a little different, but always good.

 

Easy Chicken Fajitas – Food and Wine Magazine

Time: 30 Minutes

Difficulty: Simple

Review:  This was really tasty, but so simple.  I expected it to be a little plain; I was wrong.  I really recommend this recipe.  It can’t get much easier and is just a good fajita.  Toss in a margarita and head to the deck and you are ready for summer!

Review:  I was a little hesitant to serve a pasta salad as the main dish for dinner, but it worked very well.  It has been in the upper 80s this week here in NC and a nice cool pasta salad on the deck was the perfect dish.  There is room to play around with this dish and add other things you may like,  my husband  added olives and cheese and I added some cheese!  The Rotel gives it the perfect amount of heat.  I think you will find this a great summer dish and perfect to take to a picnic!

Keeping it Light!

Time: 30 – 40 Minutes

Simple

Review:  OK, we did meatless twice this week!  And everyone lived!  Pampered Chef has some fun and easy recipes that often look like you worked much harder than you did, that’s a win!  However, many of the dishes are loaded with fat, but this dish is from their Lite cookbook and was a healthier take on a nice creamy dish.  I made a couple adaptations; use frozen spinach instead of creamed spinach and add a little milk if not the consistency you would like and use half fat free cream cheese and half low-fat.  It is still a tasty, creamy dish.

Red Wine Braised Flank Steak with Roasted Red Peppers and Gruyere – Tom Colicchio

The Indulgence!

Time: 4 Hours

Moderate Skill

Review: Yuuuummmmy!  Review is complete.  OK, well maybe not.  This dish takes time, but part of the time is while it is in the oven and you can go about doing other things.  Many of the dishes by Tom Colicchio take time and loving care, but the results are well worth it.  The only change I made was the cheese, my cheese loving husband somehow doesn’t like Gruyere, so I used Cheddar.  If there are no objections I think the Gruyere is better, but it is still good no matter what.  This is a dish that will redefine sandwiches; sandwiches can be the masterpiece of your dinner!

Sloppy Joe, Making it Healthier!

With all of the travel and fun we will be having this spring and summer Bringing Back Dinner is going to make a few changes.  We are trying to be a little healthier and will be trying dishes that have been made healthier, but still full of flavor and there will only be 2 recipes each week, one of which will be a Meatless Monday dish which will help with our goal towards healthier eating.  There will still be a full list of recipes available on the links page to help you plan a week’s worth of meals, or just grab one and go.  I hope you enjoy the leaner version of Bringing Back Dinner.

PS: Even though it is good to eat healthier as a lifestyle there are still moments in our lives where we may treat ourselves or indulge, Bringing Back Dinner is no exception and will post a few indulgences from time to time.

Review: I know, I know, you have seen this before!  I can’t tell you how simple and tasty this dish is.  We love it!  This recipe calls for only 1/2 cup of pepper jack cheese,  but don’t let that concern you.  This dish still feels very cheesy and if you don’t announce it, no one will know the difference.

Sloppy Joes – Ellie Krieger

Review: My family loves Sloppy Joes, but I hate the idea of using the packets or cans which are loaded with salt and preservatives.  I found this recipe by Ellie Krieger and will never go back.  It is full of flavor, tastes like a Sloppy Joe and is healthier.

Bonus Dish:

Emeril’s Sausage Meatballs and Red Gravy

My husband requested this for his birthday!  It takes patience and several hours, but is well worth it.  This was our indulgence this week!

Replays: Broccoli Rabe, Buffalo Chicken Lettuce Wraps, Crispy Tacos Picadillo, Oven Fried Chicken & Haluski

This past week Bringing Back Dinner took a vacation, so below are five of our favorites on instant replay!  Enjoy!

Broccoli Rabe, Garlic & Pasta

Ease: Simple

Review:  Anthony Bourdain made something like this on the ABC show “The Taste”.  I looked for a recipe online, but didn’t find exactly what I wanted.  He made it look like a simple dish you through just throw together and many of the recipes made it a lot more complex.  In the end I just did what he said to do.  I sauteed garlic in oil (about 5 cloves), added in about a scant tsp of red pepper flakes and sauteed until colorful and fragrant, then add the chopped broccoli rabe, they usually come in bunches, one bunch served 4.  Remove any leaves if still attached when you purchase it.   Cook until just tender, but still has a little bite to it – about 3-5 minutes.  Meanwhile cook pasta.   Once the the Broccoli Rabe and pasta are done toss together and add salt and pepper to taste and top with a nice cheese.  I chose grana padano.

I will say everyone in my family was surprised by this dish.  They looked at it and said “is that it?” took a bite and said “mmmm, hey this is good!”  So to redeem myself in my earlier omissions of fatty food I admit I served this with sweet Italian sausage that I crumbled and browned.  I put in a bowl on the side to let people choose to go whole hog or not! Pun intended.

Crispy Tacos Picadillo- Martha Stewart Living

Ease: Simple

Review: I’ve mentioned before that we love tacos! Truth.  We love them almost any way we can get them and never get tired of them.  I have given this recipe before and probably will again.  It is just a good recipe.  Easy to make and the flavors are so much better than a packet.  Don’t be afraid to cook from “scratch”.  You can do it, even if your friends and family do faint.  Give this one a try, you will be glad you did.

Haluski : Allrecipes.com or Guy Fieri (Originally from the Frugal Gourmet)

Time: 30 minutes- 1 hour depending on the recipe you use.

Ease: Simple; 3 main ingredients and full flavor

Review: I first tried this recipe from the cookbook “The Frugal Gourmet on Our Immigrant Ancestors” and largely still use this as my guide.  The Allrecipe.com ingredient list is the same, but the cooking method different.  I saute (or caramelize depending on time) the onion then add the cabbage and cook it until tender, but still full of color.  While this is cooking boil the pasta and toss together at the end.  I don’t know how to explain why this is so yummy, but it is.  Simple and good.  My family likes the addition of kielbasa, but to keep it vegetarian you can skip it.  My son requested this for this week.  Good choice.  FYI: They don’t even like cabbage and love this.

Ellie Krieger: Oven Fried Chicken

Ease: Simple

Review:  This is a family favorite.  We will never buy store bought chicken nuggets or tenders again.  It is fresh and healthy and just plain good.

Tip: I alter this to make it in to nuggets or tenders rather than use the bone in chicken thighs.  The basic recipe works with any type of chicken I’ve tried.

Buffalo Chicken Lettuce Wraps – from Bringing Back Dinner

Time:  30-45 Minutes

Ease: Simple

Recipe:

1 pound ground chicken

½ cup chopped onion

1-2 cloves garlic

1 Bottle Franks Buffalo Sauce

Lettuce leaves (keep uncut to make small cups)

Blue Cheese and Ranch for toppings (optional)

Saute the onion until translucent, then add the garlic and sauté about 30 seconds.  Add the chicken and cook until done, no pink.  Once the chicken is done stir in about half of the Buffalo sauce and stir through until heated.  Scoop into lettuce leaves and serve. Optional, top with blue cheese crumbles before serving. Serve with celery and carrots with Ranch and Blue Cheese dressings

This was a win!  Everyone loved this dish (almost, one doesn’t like buffalo) and requested we make this again.  It was easy and quick.  The coolness of the lettuce was a great compliment to the heat from the buffalo sauce.
