Review: Instant Pot (PC Quick Cooker) Lasagna

I love pressure cooking!!! And I’ve yet to blow up a single thing!! Really!!! Pressure cooking is fast, easy, flavorful, and doesn’t heat up the kitchen. I started with a basic electric pressure cooker, then moved to the Instantpot and when it died I bought my long desired Pampered Chef Quick Cooker, but really they all do the same thing, simplify meal time.

I’ve tried a lot of things in the pressure cooker and I’d own one just to make my own dried beans! No pre-soaking yaaasss!! 26 minutes and done! It does so much more though!

I finally decided to try a lasagna, which seemed like it would never work, but it did and it did it beautifully.

Review: While I used the information from Amy + Jacky I did improvise. I found that their recipe is a basic lasagna recipe and I made it the way I would normally. Honestly, one of the best is the one right on the side of the Mullers lasagna noodle box, but any one will do and this recipe is a good basic lasagna recipe, so go for it.

I did not use sausage, just because didn’t have any on hand. I also always add an extra layer of cheese in the layers. It turned out great!! The lasagna was perfectly cooked and tasted delicious. We will do this meal again!

Tips: If you have a springform pan that fits in your Instantpot that will be the easiest, but any pan that is compatible to your machine should work.

The trickiest part is breaking the noodles to fit the pan. I used a knife to have more control to cut the angles I wanted.

You MUST use “No Boil” noodles!

You can broil off the top for a nice brown crusty top, but you don’t have to.

Instant Pot vs Pampered Chef Quick Cooker: I have found that I have to add a little extra time to my Quick Cooker for almost every recipe I make. Both machines require practice and deciding what you think is just right.

This recipe called for 24 minutes on High, but for the Quick Cooker I had to do it for 40 minutes and did 10 minutes natural release, which is honestly not much different from making it in the oven. I also added 2 cups water to the pot instead of 1 cup. While I could have done the whole thing in the oven it just so happened that our air conditioning died and it was 90 degrees in my house! Somebody say yayyyyy pressure cooker! I was able to make a yummy dinner without heating up the house. That was a win!

Will I do it again? Absolutely! While my pressure cooker did it’s thing I went about doing mine and not even thinking about it. Fix it, forget about it!!

What’s for Dinner? Pampered Chef Lemon Pasta Chicken Toss & Black Bean Pumpkin Chili by Kitchen Treaty

Summertime is full of vacations, staycations, running around and general busyness and can feel like we lose touch with each other, but with all of the parties, BBQs, picnics, pool parties etc.  It provides us with so many different ways to connect. So while summer is different from the rest of the year I encourage you to take advantage of the chance to connect, reconnect and just hang out with one another and build relationships as well as memories, so while this is a busy time remember you are still “Bringing Back Dinner”; food is the tool that gathers us.  Have fun and laugh a lot!

Pampered Chef – Lemon Pasta Chicken Toss

Review:  I really do like Pampered Chef recipes, they are easy and always look like you worked much harder than y ou did.  This recipe is no different.  It was a quick and easy but still tasty meal.  We made an exchange though; spinach for broccoli.  You could use either vegetable or add something new.  This dish would be easy to play around with.

 

MEATLESS MONDAY – Kitchen Treaty – Slow Cooker Black Bean and Pumpkin Chili

Ease: Simple

Review:  This dish sounds weird, I’ll just say it, but it is really very good!  My family loved it and one of them even tweeted about it  “Let’s just make a deal to put pumpkin in everything. It makes food ten times better.”  You can’t get a much better review!  We were divided on one aspect of this dish – heat.  That is why they make Sriracha sauce.  Just serve hot sauce on the side for those who want a little heat.  Otherwise a perfect meal.

We often think of the slow cooker as a winter cooking device, but it is a great for the summer.  It doesn’t heat up the kitchen and frees you up to run around town all day and not worry about dinner.  Pull out your crockpot and have a great day at the pool!  Dinner will be waiting for you.

What’s for Dinner? Pampered Chef’s BLT Ranch Salad Pizza & Vegetarian Lasagna

I have had several people talk to me about ways that their family connect and I want to take the time to say that my suggestions are just that, suggestions.  Please do not feel judged by me or unable to reach the bar etc.  The important thing is that you bring dinner back or breakfast into your lives and by this I mean take time around your meals to set aside the business of life and re-connect, get to know each other and share life.  However you do this I am rooting for you!  Relationships are an important part of life and making safe places is invaluable.  I’d love to hear from some of you about how you create such a place in your home.  Share through the comments section, on facebook or twitter and use #bringingbackdinner

Ease: Moderate to Simple

Review: this is really a great dish.  It is a nice dish for your family and would make a great dish for company.  You could try using different ingredients and use the same method to have a little fun with this!

Review:  Pampered Chef recipes are simple, tasty and always look like you worked harder than you did.  They are not the healthiest, but good.  My family like this, over all.  My husband loved it and the kids thought it needed a little less cream cheese.  I have to agree.  I think the amount of cream cheese depends on what you like, so just adjust for your family.  When I make this again I will probably put half the amount of cream cheese on half of the pizza and the normal amount on the rest.  Keep everybody happy!

Leftovers Redone

This week we also turned leftover steak into fajitas.  I know, it sounds like a crime.  Otherwise there was not enough to share.  I also freeze any leftover spaghetti sauce and pulled some out for dinner this week.  Try making your leftovers into something else, but shhhhh don’t tell them, they will never know it.

Review: We visited Wales in April and I discovered that my family really likes lamb.  I had no idea.  This dish was very good and simple.  I added Tuna steaks because the meat was small and it seemed like a good combo.  Both were very good.

Tip: Look for the meat and fish on sale.  I found the lamb on sale, but in small pieces which made it a nice combo dish.

Pampered Chef: Family Burrito Bakeburrito bake

Time: 30 minutes in the microwave  1 hour in the oven

Ease: Simple

Review: I am a huge fan of Pampered Chef products and I enjoy the recipes because they are quick and often look like you put much more time into them than you actually did.  My family liked this meal and it was ready in minutes.

Tip: You can make this in any casserole dish and do not need the Deep Dish Baker by Pampered Chef.  Although it is a nice thing to have.  just make sure you have room to layer.

Ellie Krieger: Oven Fried Chickenchicken tenders

Time: 30-45 minutes

Ease: Simple

Review:  This is a family favorite.  We will never buy store bought chicken nuggets or tenders again.  It is fresh and healthy and just plain good.

Tip: I alter this to make it in to nuggets or tenders rather than use the bone in chicken thighs.  The basic recipe works with any type of chicken I’ve tried.

Fresh Market: Curried Sweet Potato and Pear Soup

Ease: Simple

Review:  Wow, this was so simple and so good.  Everyone enjoyed it even though it has neither cheese nor cream in it! But you would never know.  We served it with Goat cheese on toasted bread instead of Roquefort Cheese as suggested. Ok-there still must be cheese somewhere!

Tip: You can use chicken broth in place of wine if you prefer

With the holiday season in full swing life is pretty crazy and I caved, don’t feel bad if you have to sometimes too.  I bought frozen lasagna one night, but when you have been eating nice fresh, homemade meals frozen just can’t compare and they are loaded with extra sodium and preservatives.  But sometimes….

Restaurant Review: Josephine’s Bistro Greensboro, NC

We had a lovely date night this week and visited one of our favorite restaurants, Josephine’s Bistro.  If you get the chance to go here you should!  The food has been consistently good.  I find most places are too heavy on the salt, but Josephine s has a delicate hand with seasoning allowing you to experience the most from the flavors.  The wait staff is helpful and courteous and they have a great wine selection.
